Sovana
Production disciplinary of wine with Denomination of controlled origin "Sovana"
Art. 1.
The denomination of controlled origin "Sovana" with its typologies rosso, rosso superiore, rosso riserva and rosato, is reserved for wines that meet the requirements and conditions stipulated by the present production disciplinary.
For the typologies "Sovana" rosso superiore and "Sovana" rosso riserva (for details look at art. 2) it is allowed the notion of one of the following vine plants: Sangiovese, Aleatico, Cabernet Sauvignin, Merlot.
Art. 2.
Wines with the appellation denomination of controlled origin "Sovana", vino rosso, rosso superiore and rosato (without the specification of the vine variety), have to be obtained from the vineyards providing following varietal composition:
Sangiovese: at least 50%. The rest can be made up by red grapes, non-aromatic, obtained from the varieties authorized and/or recommended in the province of Grosseto and produced in the production zone precised in the following art. 3. Wine with the appellation denomination of controlled origin "Sovana" rosso superiore and "Sovana" rosso riserva, with a notion of one of the following vines: Sangiovese, Aleatico, Cabernet Sauvignon and Merlot, have to be obtained from grapes of correspondent variety for a minimum of 85%. Red grapes, non-aromatic, obtained from the varieties authorized and/or recommended in the province of Grosseto, can make up the additional 15%.

The environmental and growing conditions of vineyards designed for the production of the wine D.O.C. "Sovana" have to be those traditionally recognized in the zone of concern and have to be capable of granting the grapes and the derived wine particular qualities. The vineyards have to be situated in favorable ground of good exposition. Humid grounds and those not sufficiently exposed to the sun are not suitable for the vine cultivation.
The planting density has to be the one generally used. This has to respect the particularities of grapes and wines. The new and renovated vineyards have to be planted with a density no lower than 3.300 plants per hectare.
Any kind of forcing is prohibited.
Emergency irrigation is permitted.
The maximum yield of grapes admitted for the production and the minimum total alcoholic strength by volume is as follows:
Typology "Sovana"
Rosso and rosato: The grapes production T/Ha is 11 and the minimum total alcoholic strength by volume is 10.50%.
Rosso superiore and rosso superiore with the notion of the vine: grapes production T/Ha - 9 and the minimum total alcoholic strength by volume reaches 11.50%.
These limits are to be respected even in the case of extremely favorable years, when the crop is to be controlled by an accurate grapes reduction thus the production does not exceed 20% of above-mentioned limits. For the vineyards of heterogeneous cultivation the production is to be counted according to the vine surface in production.
